The Piedmontese breed is fed on a diet of grass, cereals and pulses resulting in a meat that is low in external fat, tender and bursting with flavour. This is one of the highest quality beef breeds in Italy.
It is also highly sought after on account of the fact that it is lower in fat, cholesterol and calories than conventional beef. We are proud to be using it in a variety of dishes over the coming months. Most simply, you can enjoy the Costata di Fassona which is a rib eye on the bone typically weighing approximately 650g. Ideal for sharing, the steak is simply chargrilled and served with rosemary potatoes.
We are also offering a carpaccio of Fassona beef. Served with rocket salad and shavings of red cow aged parmesan shavings and drizzled with our finest extra virgin olive oil from Planeta.
For a small plate option look out for our polpette di Fassona making an appearance on our specials board – delicious melt in the mouth meatballs braised with wine herbs and spring onions or try the Fassona beef in one of our slow cooked ragu pasta dishes.
